Spinach Omelet

Spinach Omelet is one of my favorite go to dishes when I am trying to add vegetables to my diet. This dish is packed with protein, iron, calcium and magnesium. Ingredients: eggs, onion, baby spinach, mozzarella cheese.

Directions: dice onions and caramelize in frying pan first with some butter. Then in a bowl beat 2-4 eggs. Next add baby spinach and mozzarella cheese into the bowl. Pour all ingredients in pan until fully cooked. Bon Appetit!
